Why Oudtshoorn — and the Little Karoo Stocking-Rate Controversy

Settles why ostrich farming is locked to infrastructure and markets, and what happens when an official capacity guideline has no demonstrated basis.

#Two case reports, two different weapons

A 71-year-old man was kicked by an ostrich. At laparotomy the surgeons found free fluid in his abdomen and a hole through his small intestine. The case report notes, drily, that ostriches "may turn aggressive rather than run when threatened, especially when cornered" (Usurelu et al. 2015). Separately, a 34-year-old farm worker was struck in the face. The surgeons recovered fragments of the bird's rostrum from the wound, found multiple ruptures of the sclera and a disorganised globe, and he lost the sight in that eye immediately and permanently (Chaudhry et al. 2005).

Two different mechanisms, two different injuries. The kick comes forward and downward with a clawed toe and takes your abdomen. The head strike comes at your face. A farmer who has planned for one has not planned for the other.

#Why the birds stayed in the Klein Karoo

South Africa did not spread ostrich farming across the country, and the reason is not that farmers elsewhere never tried. Three conditions coincide around Oudtshoorn and coincide almost nowhere else at scale.

A dry climate. DALRRD states the siting rule plainly: ostriches "require a dry climate, especially for breeding", and the department explains North West's low output by pointing out that it is "a summer rain region" (DALRRD 2023). Humidity punishes hatchability, and the wet months in a summer-rainfall district land on top of lay and brooding — the worst overlap available, since the chick killers are enteric.

Irrigable lucerne on brak alluvial soil. The feed base is grown, not bought in. The Oudtshoorn Research Farm alone runs 843 ha on about 230 mm of annual rainfall and produces roughly 800 t of lucerne a year, mostly under flood irrigation, alongside a breeding flock of about 400 birds (WCDoA). Note what that means: on 230 mm of rain, the district's feed self-sufficiency rests entirely on irrigation water. Hold that thought — it comes back later in the course when we weigh the industry's carbon ledger against its water ledger.

Sunk infrastructure that cannot be rebuilt cheaply. EU-approved export abattoirs, two tanneries dedicated to ostrich out of the country's ten exotic-leather tanneries, a feather plant, the tag-issuing system, a state veterinary service that knows the species, and the world's first dedicated ostrich research farm, established in 1964 (DALRRD 2023; WCDoA).

That third one is the binding constraint, and it is why the honest description is infrastructure-locked, not merely climate-locked. You could fix a humid climate with a better incubator building. You cannot fix a 900 km haul to the nearest EU-approved abattoir. A bird raised out of reach of that plant and a tannery is worth its meat only, and the hide — call it 45% of the animal — is stranded.

DALRRD adds the sentence most enterprise plans skip: "It takes 30 months before money can be obtained from the business", and, more bluntly, that "ostrich farming does not lend itself towards subsistence farming" (DALRRD 2023). That is the department's own assessment of its own industry. Two and a half years of feed, labour and compliance before the first meaningful cheque, into a concentrated market, with the hide's value dependent on someone else's tannery.

#The 22.8 hectares nobody could defend

Now the part of this lesson that matters beyond ostriches.

The national department's guideline for breeding ostriches on natural Little Karoo veld was 60 ha per large stock unit, which converts to roughly 22.8 ha per ostrich. Farm inside it and you are, on paper, farming responsibly.

Then Wheeler, Knight and Vetter went looking for the evidence behind the number. They examined the principles, data and assumptions the guideline rested on, and reported that they found no demonstration that it is ecologically or economically sustainable — most of the underlying studies had addressed only one dimension, and the rates that looked economically viable were several times higher than the ecologically derived ones (African Journal of Range & Forage Science 32(4):233–241, 2015).

Be honest about the standing of that finding as you read it here. The paper is behind a paywall. Its citation has been checked independently and is exactly right, but the specific figures above — the 60 ha/LSU guideline and the 22.8 ha conversion — reach this course second-hand rather than from the authors' own pages. Treat them as reliable enough to reason with and not reliable enough to put in quotation marks on a slide until someone has read the full text.

Cupido's field survey supplies what the desk study could not. Across 100 Little Karoo farms he found 67.7% of ostrich camps overstocked, against 55.1% of camps carrying mammalian livestock, capacity systematically overestimated, poor separation of different ecotopes inside single camps, and clear piosphere damage — the bare, trampled, dunged sacrifice zone that spreads outward from a water point (Cupido 2005).

#Run the number yourself

Take a 900 ha Klein Karoo unit — a real size, not a small one. At the guideline of 22.8 ha per ostrich, that farm carries 39 breeding birds. Not 39 breeding pairs. Thirty-nine birds, total, on nine hundred hectares.

Now put the earlier numbers next to it. The farm needs to fund roughly 30 months before meaningful income. Breeding stock averaged R11 054.35 a bird at the March 2026 Oudtshoorn auction. Thirty-nine birds is a flock too small to justify its own labour, its own vehicle, or the compliance burden that comes with export exposure.

You do not need a survey to predict what that farmer does next. He puts on more birds. Cupido measured exactly that decision, on 100 farms, and reported the farmers' own reason for it: they overstock in order to make a living from the land. The overstocking in the Little Karoo is not primarily an ignorance problem. It is an arithmetic problem, and the arithmetic is between the guideline and the mortgage. That is why "just follow the recommended stocking rate" is not advice — it is a wish.

#"Seventy-five percent of what?"

One more habit to take out of this lesson, because it will save you money in every other module.

DALRRD's 2023 profile opens by saying South Africa "dominates the ostrich industry worldwide with 75% of the global market share". Twenty-two pages later, the same document reports that in 2022 South Africa's exports were 1% of world exports for ostrich meat, ranked 19th — 80 tonnes (DALRRD 2023).

Neither statement is a lie. They measure different things — share of birds slaughtered and of the leather trade in one case, a narrow traded-meat tariff line in a collapsed year in the other — and the document never reconciles them. The defensible version is that South Africa is very probably the largest ostrich producer in the world by birds slaughtered. Anyone quoting 75% should be able to finish the sentence: 75% of what?

The same discipline applies to the value split, and here three official numbers disagree inside two official documents:

Per bird the physical yields are steadier: about 42 kg of meat, about 4.2 m² of leather and about 1 kg of feathers (DALRRD 2023). The working rule of thumb — the hide pays the bills, the meat pays the feed, the feathers pay the wages — survives all three sources. The exact percentages move with the exchange rate and the fashion-leather market, which is precisely why you should never build a budget on one of them.

Before you plan any enterprise on a published figure, do the two things this lesson has just done: ask what study sits under it, and ask what it is a percentage of. Then go and find your own number.
