Ducks, Geese, Turkeys and Guinea Fowl
Settles what can honestly be said about the minor poultry species on an SA smallholding, and what nobody has measured.

#Six turkeys a fortnight
A smallholder decides to raise forty turkeys for December, kill them in the yard, sell thirty and eat ten. Both halves of that plan are unlawful, and neither the buyer nor the bird is the reason.
Regulation 1(w) of GN R153 of 24 February 2006 counts one turkey as four units. One fowl, one duck, one pheasant or one guinea fowl is one unit. One goose is two. Twelve quail, four pigeons, two partridges or three baby fowls make one unit between them (GN R153). Regulation 98 then caps home slaughter at 25 units in any 14-day period, on land you own, lawfully occupy or otherwise control. Twenty-five units divided by four is six turkeys, so the ten for the table are already over the line in one fortnight. The thirty for sale fail on a different instrument: the bar on selling that meat is not in the regulation at all, it is section 7(2)(b) of the Meat Safety Act 40 of 2000, which says no meat from an animal slaughtered under the own-consumption exemption may be sold to any person.
So the December plan is six turkeys a fortnight for your own table, and thirty birds with nowhere legal to go unless an abattoir is booked. That same cap is twenty-five ducks, or twelve geese.
That is the shape of this entire lesson. The law about these birds is precise, published, and takes ten minutes to check. Almost everything else about them in South Africa is not written down anywhere.
#The unit table decides the plan before the birds do
Ostriches got three lessons because South Africa has published trial data on them for decades. These four get one, because that measuring never happened here. The legal architecture around them is just as strict.
Now the arithmetic, because the unit multiplier decides what a small facility can absorb.
Forty turkeys is 160 units. Through a rural poultry abattoir capped at 50 units a day, that is four separate slaughter days — the fenced site, the roofed holding area, the dressing room, the wash points, the sterilizer and the chilling capacity, staffed and cleaned, four times over for one batch of forty birds. Forty ducks is 40 units and clears in a single day. Forty geese is 80 units and takes two.
The bird that pays best per carcass is the bird that eats your throughput fastest. Decide the route to market first, then choose the species. Doing it the other way round is how a farmer ends up with thirty unsaleable turkeys in December.
#The honesty flag over everything below this line
Here is the finding, and it is a real one: no South African industry body publishes production volumes or margins for any of these birds. Chickens have SAPA. These four have no equivalent, and the research behind this course came back empty on volumes, prices and margins for all of them.
#Ducks: Muscovy against the Mallard line
There are two duck families on South African smallholdings and they behave like different animals.
Muscovy (Cairina moschata) is widely regarded as the standout smallholder duck here: heat-tolerant, a good forager, a strong broody that will hatch and raise its own young without an incubator, and more tolerant of limited open water than the Pekins. Muscovies are commonly reported to take slugs, snails and some fly larvae. Nobody has measured how much, so do not put a number on it and do not build a slug-control plan around it.
Pekin and the other Mallard-derived ducks (Anas platyrhynchos domesticus) lay better and that is their case. Against it: more water needed, a heavier manure and wet-litter load, and a harder bird to keep clean.
The regenerative reading is straightforward. A duck that broods her own clutch removes your dependence on a hatchery, which is the supply bottleneck small producers cannot design around. A duck that needs standing water adds an effluent problem next to whatever watercourse you farm beside.
#Geese: the one bird where forage is a real argument
Chickens cannot digest structural carbohydrate the way a ruminant can, which is why the pastured-poultry literature oversells what a hen gets from grass.
Geese are the exception. They are the only domestic poultry with a genuinely graminivorous grazing habit, and the one bird on this list where a meaningful forage contribution is plausible rather than wishful. They are also useful alarm animals and aggressive around children — plan the walkways before you plan the flock.
But hold the claim at the right strength. No South African measurement of the forage share of a goose's diet was located. The international position is well established and it is still not an SA number. If you want to know what your geese take off your veld, weigh feed offered and feed refused for a fortnight on grass and a fortnight off it, on your own birds. That fortnight will tell you more than any published figure.
#Turkeys: the rule that makes diversity the wrong answer
Turkeys are otherwise high-value birds, and heat-sensitive when they are young. Put the shade up before the poults arrive rather than after the first hot week — and note that the shade structure and the overhead predator cover are the same structure. Build it once.
#Guinea fowl: indigenous first, alarm bird second, tick plan never
The helmeted guineafowl (Numida meleagris) is noisy, semi-feral and hard to contain. It is also an indigenous South African species, which changes its legal status entirely.
Then there is the claim that sells guinea fowl to cattle farmers.

Convert whatever mixed-bird plan you are carrying into units and read it against reg 1(w) before you spend a rand. Then accept the second, harder thing: on these four species you are not choosing between published options, you are running the only trial in the district. Buy small, weigh everything, and hold your own results more firmly than anyone's article — including this one.

Why: Reg 1(w) of GN R153 of 2006 counts a goose as 2 units, so twelve geese are 24 units — just inside. Twelve turkeys are 48 units, forty ducks are 40 and thirty guinea fowl are 30, all over the cap. The multiplier is the trap: farmers count birds, but the regulation counts units, and a turkey costs four of them. Remember that s7(2)(b) then bars selling any of that meat regardless. -
2A farmer plans to run turkeys on the paddock her laying hens vacated last month, brooding the poults beside the chicks to save on heat. What is wrong with the plan?
Why: Histomonas meleagridis travels in the eggs of Heterakis gallinarum, a worm chickens carry without much cost. Recently used chicken ground and a shared brooder are the two classic routes into a turkey flock. This is the case where the "diversity is always good" instinct fails: the correct regenerative answer here is deliberate separation in time and space, because the constraint is a vector, not competition. -
3Someone tells you guinea fowl will cut the tick load on your Highveld cattle camps. What is the honest response?
Why: The trial found no significant difference between penned and excluded birds and recovered engorged nymphs that had fed on the guinea fowl themselves — the birds are hosts as well as predators. But it was run in Virginia on the lone star tick, and no SA study exists, so "proven useless here" overstates it in the other direction. Two claims can both be unsupported: that they control ticks, and that they definitely cannot.
