Pasture Dairy and the Raw-Milk Law
Settles how SA pasture dairy works, its nitrogen flashpoint, and why raw milk is a legal question before it is a farming one.

#Five cows a hectare, against thirty hectares of veld
Five cows on one hectare. Hold that against everything this module has said so far about veld: the departmental mean for the Grassland biome is 6 ha/LSU, so five Large Stock Units — five 450 kg animals — grazing Highveld veld draw on about thirty hectares (DALRRD). A kikuyu pasture in the SA dairy belt carries five cows on a single hectare and yields more than 9 000 kg of milk per hectare over the grazing period (Milk SA).
That gap is not won by better grazing management. It is bought — with a planted perennial, bagged nitrogen and a concentrate ration. Once you can price that purchase, the regenerative argument stops being a slogan.
#The kikuyu-and-ryegrass machine
SA pasture dairying runs on a belt — the southern Cape, the Tsitsikamma, the Eastern Cape coastal belt, the KwaZulu-Natal Midlands — built on one grass. What kikuyu does well is bulk: the five cows and the 9 000 kg a hectare are Milk SA's own figures. What it does badly is quality and timing. Per-cow production is low because the nutritive value of kikuyu is low, and winter and spring growth is poor — exactly when a spring-calving herd is climbing towards peak lactation.
The standard fix is to over-sow with ryegrass or clover. Milk SA puts the gain at 25 to 40% more milk — with the qualifier that matters: once establishment and persistence are solved. Over-sowing is an annual operation with an annual failure rate, not a permanent upgrade.
Concentrate is structural, not a top-up. It typically makes up 25 to 35% of cow dry matter intake. High-starch maize carries an acidosis risk and depresses fibre digestion, so a third of the diet arriving in a bag is a nutritional decision as much as a cost one.
Kikuyu hides its calcium. It contains oxalic acid, which binds calcium and makes it largely unavailable to the cow, so the ration has to be pushed to 1.5 to 2 parts calcium to 1 part phosphorus. A herd on lush, well-fertilised kikuyu can be short of calcium in the middle of apparent abundance — the dairy version of the protein cliff on winter veld.
#The nitrogen flashpoint
Here is where "pasture-based" and "regenerative" stop being the same word.
Milk SA's own agronomy recommends a moderate 50 kg N per hectare per dressing, and warns explicitly that a higher rate raises pasture nitrate content in a way that may harm rumen function.
Total nitrogen applied on SA kikuyu-ryegrass dairy pasture commonly runs at 300 to 500 kg N per hectare per year, with some producers now working at 100 to 250 (Land 2020). That paper could not be re-opened at source when this course was checked, so treat the range as indicative rather than measured, and ask your own fertiliser records what your number is.
Do the arithmetic rather than the argument. At Milk SA's recommended 50 kg per dressing, 400 kg N/ha/yr is eight fertiliser dressings in a year. On a hectare yielding 9 000 kg of milk that is 22.5 kg of milk per kilogram of applied nitrogen, before counting the concentrate.
#What the cow does with it
Heat. November to March carry the highest mean temperature-humidity index in South Africa and Namibia, and that is the window in which dairy heat stress bites. The SA study behind that seasonality dates from 1990, so its trigger values predate current genetics and current summers — treat any published threshold as a guide, not a switch, and work from the current review (Erasmus et al., SASAS 2025). The practical point: shade must be in the paddock, not only at the dairy. A cow queueing for shade is a cow not grazing, and paddock trees are a production and a regenerative intervention at once.
The calf. The colostrum principle is quality, quantity and speed, in the first hours of life (AHDB). The published volumes are UK guidance for Holstein-frame calves and must be scaled for a Jersey, so take the amount and the assessment method from your vet, not an imported table. Anything past feeding and hygiene — a scour treatment, a vaccine, an antibiotic — is a veterinary decision.
Once-a-day milking is pitched as a way to cut labour and protect cow condition. The evidence is almost entirely from New Zealand, and no published South African once-a-day trial could be found. That does not make it wrong — it makes it a decision you justify on your own labour bill and condition scores.

In dairy, unlike beef, you cannot look up this week's price and plan against it. Your price is a buyer relationship, specific to you and revisable. A pasture dairy is a contract business wearing a grazing business's clothes.
Before you cost a single hectare of kikuyu, make two calls: ask your local authority whether it is listed in Annex C, and ask your buyer for the price schedule in writing. Then write down the kilograms of nitrogen a hectare you will buy. That number decides whether your pasture dairy is regenerative or merely productive.

Why: "The cows harvest their own feed" describes the grazing, not the inputs behind it. Milk SA itself recommends a moderate 50 kg N per hectare per dressing and warns that higher rates raise pasture nitrate in a way that may harm rumen function. What the industry applies annually is a farmer's decision, not a fact of nature. -
3Cows on well-fertilised, actively growing kikuyu show signs of a calcium problem. What is the specific reason kikuyu warrants attention to the calcium-to-phosphorus ratio?
Why: This is the dairy version of the winter protein cliff: the shortage is availability, not supply. The oxalate ties up calcium the cow has already eaten, which is why the ration is pushed to roughly 1.5 to 2 parts calcium to 1 part phosphorus. An abundant paddock is not evidence that the cow gets what is in it. -
4Why does this course refuse to put a rand-per-litre margin on a pasture dairy?
Why: The cost side is published and worth teaching: about 95% of the cost of a litre is feed. The income side is the problem — the public series are indices, and the one widely quoted price figure carries no date. Your margin comes from your own buyer's contract, which is itself the lesson about how this industry prices.
