Land First: Why the Ground Comes Before the Animal

#The biggest cost on a South African beef farm is not an animal cost

Open the Land Bank's beef enterprise budget and follow the money. In its extensive 1 000-LSU, 625-cow system, 75.5% of the total variable cost is bought supplement — winter lick alone is 55.2%, at R934.81 per LSU per year. Veterinary visits are 0.2%. Repairs to troughs, fences, windmills and dams are 0.9% (Land Bank Livestock Enterprise Budget 2023/24, v2).

The single largest expense on that farm is a bag of feed bought to replace what the veld did not supply between about May and September. The invoice calls it a nutrition cost. It is a land cost, and it decides whether the farm makes money.

That is the whole argument for running this course land-first. You cannot fix a R1 495.69 per cow winter lick bill (2023/24 budget rands) by buying better cows. You fix it by changing what the ground produces, when it produces it, and how many mouths are standing on it.

Modules 1 to 9 are the shared foundation: reading your land (1), soil and water (2), the grazing ledger (3), recovery and the contested evidence (4), fire, bush and pasture (5), fodder flow and drought (6), animal health as an ecological problem (7), the law (8) and the money (9). Module 18 turns all of it into a changed year on your own farm.

You are welcome to read your species module tonight. It will make more sense in a month, and here is precisely why.

#The spine: six principles, and the seventh South Africa forces

Every module hangs off six principles. They are not values you hold. They are constraints, and a decision either honours one or violates it.

  1. Context first — the land, climate, market, family and skills you actually have.
  2. Minimise disturbance — mechanical, chemical and biological.
  3. Keep the soil covered — which on South African veld means grazing for residual, not to the ground.
  4. Keep a living root in the ground for as much of the year as the season allows.
  5. Maximise diversity — plant, animal and microbial.
  6. Integrate animals — the animal is the tool that cycles nutrients and applies disturbance where you choose, rather than where it happens to stand.

Those six were written where rain is reasonably reliable. South Africa adds a seventh: manage for the drought you have not had yet. It is rainfall variability, not rainfall average, that breaks farms here. The next lesson turns all seven into tests a real decision can fail.

#Three arguments that would otherwise be repeated fourteen times

A species-catalogue course — one chapter per animal — hides ecology by design. It also repeats itself, badly. Three examples decide the structure of this course.

One: the LSU arithmetic. A Large Stock Unit is a 450 kg animal gaining 0.5 kg a day on forage of 55% digestible energy, needing about 75 MJ of metabolisable energy to do it (Mokolobate, Scholtz & Calitz, ARC). Every grazing species on your farm converts into that currency — cattle, sheep, goats, horses, donkeys, ostriches and the game that lives on you whether you invited it or not. Browsers need a second ledger of their own, because the departmental capacity map excludes browse entirely, but it is the same arithmetic. The ARC's own warning is that grazing capacity and actual stocking rate "sometimes differ by as much as 300%, leading to total degradation". You cannot teach that fourteen times; you teach it once, in Module 3, and then every species module writes into the same ledger.

Two: the abattoir rule. Section 7 of the Meat Safety Act 40 of 2000 applies to cattle, sheep, goats, pigs and poultry in exactly the same way. It decides whether an enterprise exists before you cost it. (The Act reaches only the animals listed in its Schedule 1, so for game, ostrich and farmed fish, check the schedule before you assume — Module 8 does.)

Three: refugia. Refugia is the share of a worm population not exposed to a drench at the moment you treat — larvae sitting on the pasture, and worms inside animals you deliberately left alone. It is the argument that governs how you use anthelmintics on sheep, goats and cattle alike, and South Africa has a hard evidence base on getting it wrong: resistance in Haemonchus was found on all 52 sheep farms surveyed in Mpumalanga and KwaZulu-Natal, with 8% of strains less than 40% susceptible to all four drug groups tested. The authors called the levels possibly the highest recorded anywhere in the world at that point (Van Wyk et al., Onderstepoort J Vet Res, 1999). One argument, taught once, in Module 7 — not a paragraph bolted onto each of sheep, goats, cattle and game.

#The scorecard: three legs, and any two will lie to you

You need a way to tell, at the end of a year, whether the farm got better or you simply spent the veld. Profit alone will not tell you, because per-hectare production can be inflated for years by overstocking — capital destruction dressed up as productivity.

Work it once, on the Land Bank's own numbers. That budget runs 625 cows at an 80% weaning rate, weaning 240 kg calves, on 1 000 LSU of grazing. At the Grassland Biome mean of 6 ha/LSU that is roughly 6 000 ha.

  • kg weaned per cow exposed: 0.80 × 240 = 192 kg
  • Total kg weaned: 625 × 192 = 120 000 kg
  • Leg 1 — kg weaned per hectare: 120 000 ÷ 6 000 = 20 kg/ha
  • Leg 2 — cost per kg weaned: R2 711.63 variable cost per cow ÷ 192 kg = R14.12/kg (2023/24 budget rands)

Twenty kilograms of weaner per hectare per year, on the Land Bank's conventional extensive system costed onto veld at the Grassland Biome mean. That is the number every intervention in this course has to move. Notice what the budget cannot tell you: whether those 6 000 ha are in better or worse condition than last year. Leg 3 is in no budget. You walk out and measure it.

#Where there is no number, that is the lesson

The research behind this course was checked, line by line, against the primary sources. Several confident-looking figures did not survive. A widely repeated crude-protein percentage for winter sourveld turned out not to appear in the article it was credited to. Four infiltration figures presented as South African measurements turned out to be North American, New Zealand and Irish — and one was not in the cited source at all. Browsing-capacity norms per biome, which every game and goat budget seems to assume, could not be sourced.

Those gaps are left open and named. The fourth lesson of this module is built entirely out of them. When the course says "nobody has measured this in South Africa", that is not an apology — it tells you which decisions you must make from your own observations rather than from someone else's slide.

Before the next lesson, do one thing: find your last twelve months of feed invoices and add them up. That total is your land telling you what it did not do. Everything from here is about shrinking it.
